INGREDIENTS:
2 Free range eggs
2 stalks of Kale
large hand full of baby spinach
1/4 sweet red pepper
2 TBS red onion chopped
1 - 2 Garlic cloves
1 TBS pesto sauce
1 TBS Goat cheese curds
Salt & pepper to taste
DIRECTIONS:
- Heat pan and coat with olive oil
- Chop up all veggies and leafy greens
- Whisk eggs and pesto together
- Mix in all veggies making sure everything is coated with egg
- Pour into pan and place a plate over top allowing to cook on medium heat for about 4 minutes
- Remove lid and flip omelet, place goat cheese curds and close omelet allowing to cook for an additional minute
