FRIED EGG BACON AVO STACK

I love breakfast, eggs are so versatile and full of protein!




INGREDIENTS:

2 Free range eggs
1/2 avocado
1 Vine ripened tomato
2 strips sulfate free bacon
Red onion chopped
Sweet red pepper chopped
2 slices of mozzarella cheese
Salt and pepper to taste

DIRECTIONS:

- Heat pan and cook bacon
- Leaving the bacon fat in the pan (use this as oil) Fry egg placing mozzarella cheese on top at the end
- slice tomato into thin slices and place on plate (you can serve cold to fried)
- Sautee peppers and onions
- Place egg and bacon over top of tomato
- Put Avocado slices on top of bacon and sprinkle with sautés peppers and onions

  • Try adding some hot sauce ( Siracha is good) to add more flavour :)
