INGREDIENTS:
- 1 chicken breast
- Hand full of butter lettuce
- 4 Cherry tomatoes
- 1/2 avocado
- 1 TBS hemp hearts
- 2 Inch cucumber chopped
DIRECTIONS:
- Preheat oven to 375 Degrees F
- Coat chicken breast in almond flour and dash with salt and pepper
- Bake chicken in oven for 40 minutes until cooked through
- Chop up all salad ingredients and make dressing while chicken is baking
- Top with chicken, hemp hearts, avocado and almond dressing
DRESSING
- 1/4 cup raw almonds soaked overnight or for at least 8 hours
- Thumb size piece of ginger grated ( add less or more depending on your liking)
- 5 dashes of coconut amines
- salt and pepper to taste
- 5 dashes of lemon juice
- 2 TBS of olive oil
DIRECTIONS:
- Soak Almonds overnight, drain water and place in a blender
- Add in all other ingredients, if too thick add more olive oil or water until desired constancy
