CURRY COCONUT AVOCADO SHRIMP SOUP

This is a great funky tropical soup! It might seem a little weird at first to some but the flavour combinations are awesome!





INGREDIENTS: (Serves 4 )

1 can coconut milk
1 1/2 cups of chicken or vegetable stock (if you don't have homemade you can use the tetra pack kind)
2 organic avocados
1 TBS fresh lime juice ( 1/2  a fresh lime)
1 1/2 cups of fresh hand peeled shrimp
1 TSP curry powder (You can make your own curry powder too , see NOTES)
1 green onion for garnish
Pinch of salt and pepper to taste

DIRECTIONS:

- Place all ingredients except the shrimp and green onions into a pot
- Heat all ingredients slowly on the stove, mixing well with a whisk ( for a creamier soup use an immersion blender, or remove and blend in a blender well, then place back into the pot to heat again)
-Serve in a bowl and top with shrimp and green onions

NOTES:

Home made curry powder, its super easy! :

2 TSP Masala
2 TSP Tumeric
1/2 TSP Salt
1/8 TSP Cayenne
