Paleo Banana Chocolate Muffins

I had a whole bunch of bananas that were in desperate need of being used up quickly! Memories of my moms old sugar and gluten filled amazing banana bread came to mind. Of source this recipe is complete modified excluding all gluten and utilizing the bananas own sweetness for sugar, but certainly tastes just as good!

INGREDIENTS: ( makes about 12 muffins)

- 1/2 cup coconut flour
- 2 ripe bananas
- 3 eggs
- 4 TBS coconut oil melted
- 1 TSP vanilla
- 1 TSP true cinnamon
- 1/4 TSP nutmeg
- 1/4 TSP cloves
- 1/2 TSP baking soda
- 1/4 TSP salt
- 1/4 cup Pure dark chocolate chips


- Preheat oven to 350 degrees F
- Mash up banana in a large bowl combining in all wet ingredients
- Mix together all the dry ingredients and fold into the wet combing well
- Pour mixture into paper lined muffin tin
- Place in oven and bake for 20- 25 minutes until cooked through.
- Enjoy as is or with a bit of melted butter :)
