Chicken Cordon Bleu With Santa Fe Salad And Avocado Dressing

Dinner night with my BFF ! We decided to make home made ham and swiss cheese chicken cordon bleu and pair it with a nice healthy salad, so I came up with this Santa Fe styled salad recipe :)



CHICKEN CORDON BLEU: (serves 2)

- 4 slices of swiss cheese
- 4 slices of natural smoked ham
- 2 chicken breastes 
- 1/4 tsp cumin
- 1/4 tsp garlic powder
- pinch of salt and pepper
- 1 TBS olive oil

DIRECTIONS:

- Preheat oven at 375 Degrees F
- Using a meat tenderized or large sturdy cup, pound out chicken breast until flat.
- Place ham and cheese inside and roll together tightly placing it so that the end are facing down to hold it together ( you can also use tooth picks if it will not stay)
- Coat chicken breast in olive oil and sprinkle with spices
- Place chicken in oven and cook for 40 - 45 min 

SANTA FE SALAD: ( serves 4, or 2 with left overs)

- 1/2 head ice burg lettuce
- Can of baby corn
- Can of black beans
- 1 Chopped up tomato
- 1/2 avocado
- Shredded cheese of choice

DRESSING:
- 1/2 ripe avocado
- 1 clove garlic
- 1 TBS olive oil
- 2 TBS coconut cream
- 1/4 cup water
- 1/2 fresh squeezed lemon juice
- Salt and pepper

DIRECTIONS:

- Chop up all ingredients and place in a bowl
- Add in corn and beans ( rinse the black beans first though)
- next mix all the dressing ingredients in a blender and leave on the side until ready to eat!
