PROSCIUTTO WRAPPED BROCCOLINI W/ HOME MADE LEMON GARLIC AIOLI

A little bit of this a little bit of that, this was a meal I create that was a " whats in the fridge that I have to use ?" Turned out great!





INGREDIENTS:

1 bunch of Broccolini ( its basically asparagus and broccoli grown together :D)
5 Strips of Prosciutto ( I think it would taste great with bacon too, and less salty if you prefer)
1 egg
1/4 cup olive oil
1 tsp lemon juice
2 garlic cloves
1 TSP cold water
Pinch of salt
Pepper to taste

DIRECTIONS:

- Wash and cut the broccolini, wrap 3-4 stalks in a thin slice of prosciutto ( do the same to the rest)
- Place in a large frying pan and cook on medium heat for 4-5 min each side turning. (make the sauce while they are cooking
- Separate the egg from the yolk
- In a separate pan you can fry up the egg white to add on top of the prosciutto
- Mince garlic and using a mortar and pestle or magic bullet blend into the egg yolk
- Remove from bullet and slowly pour half of the olive oil in while whisking, then add the cold water and continue to whisk ( it should start to slowly thicken like mayonnaise)
- Add the remainder of the olive oil and lemon juice slowly and finish whisking
- Finish with a pinch of salt
- Place wrapped broccolini's on a plate then top with egg white & Lemon garlic aioli!
