Mini Sweet Bell Peppers Stuffed With Crab Dip

When I saw these mini sweet bell peppers I instantly had the idea of making a crab dip. We used to make a hot crab dip and put it into a big bread bowl, but thats is no longer on the menu plan, this is much more delicious anyways ! :)




INGREDIENTS:

8 small mini sweet bell pepper
1/2 cup crab meat
1/2 cup ricotta cheese
1/4 mayonaise ( I used coconut mayonnaise for this recipe)
1 TSP siracha hot sauce
2 green onions
2 inch pice of cucumber chopped into tiny cubes
Few dashes of lemon juice
1 TSP curry powder
1/4 TSP garlic powder
salt and pepper to taste

DIRECTIONS:

-Cut peppers lengthwise and remove seeds
-Add all ingredients into a bowl and mix together well, add spices slowly and add more to suit your taste, and spice level.
-Using a spoon place crab dip into peppers and serve :)
