Plantain Bread !

This is amazing, no really you NEED to try this! Plantain are so tasty and make an awesome easy to make bread! You can use it to replace bread any where you would normally use have it. Check out my super tasty sandwich with home grown sprouts ! YUM




INGREDIENTS:

2 small plantains ( or 1 Big one!) Make sure they are slightly ripe (yellow with a few flecks of black)
2 eggs
Pinch of salt

DIRECTIONS:

-Preheat oven to 375 Degrees C.
-In a blender combine all ingredients.
-Oil and flour ( I used coconut flour) a bread pan, or line a 12" spring form pan.
-Pour ingredients into pan and bake in oven for 25 - 30 minutes until golden brown on top.
-Allow to cool , slice , and serve!

    1. For this recipe I had used a regular bread loaf pan, But recently I have been using a spring form 12" pan ( round) its much easier to get the bread out of the pan after If you line the bottom with parchment paper :)
