Chai Protein Powder Paleo Pancakes

Well since today was valentines day I decided to make an extra special breakfast aside from my usual eggs and veggies. PANCAKES! Who doesn't love em..?  I have tried a few different successful recipes, but I had recently seen people using protein powder. I have some "Vega One" Chai protein powder that I though would go awesome with pancakes! Sure enough it turned out amazing, and these pancakes texture and consistency is that or regular flour pancakes or better :D Enjoy~! Happy Valentines day everyone!

INGREDIENTS: ( Serves 1)

- 2 eggs
- 2 TBS almond flour
- 1 scoop protein powder ( you can use any kind really, vanilla would go nice too )
- 1/2 tsp baking soda
- 1/4 tsp cinnamon
- 2 TBS almond butter
- 1 TSP vanilla extract
- 1 sache of stevia  (optional)
- 1 - 2 TBS water
- 1 TBS coconut oil for grilling

DIRECTIONS:

- In a large bowl whisk eggs and add in all spices
- Combines in Protein flour and almond flour making sure there are no clumps
- Add in 1 TBS water to start to see how thick the consistency is, if still to thick add another TBS of water.
- Heat a large frying pan on medium heat with coconut oil
- Pour 1/2 of the pancake mix into pan and cook about 3- 4 minutes ( these pancakes will rise up and get really fluffy, when they start to do this you know its time to flip them)
- Cook 1- 2 minutes other side
- Serve while hot and spread with coconut oil or butter, top with fresh berries and maple syrup :)
