Chipotle Halibut Over Lime Cilantro Cauliflower Rice, Topped With Avocado

The other night I had a friend over for dinner and we decided to make some American inspired food having just come back from Costa Rica :) We found some nice wild halibut filets on special, I had been inspired by a recipe I had seen months ago , lime and cilantro cauliflower rice. We just so happened to find PURPLE cauliflower, I though it would be so cool looking paired up against the avocado! This dish is super easy to make and so delicious.



INGREDIENTS: (Serves 2)

- 2 filets of Halibut or white fish of choice
- 1 TBS Smoked chipotle sauce ( you can use just regular or chipolte pepper seasoning)
- 1 head of cauliflower ( we used purple to make it more fun !)
- Hand full of fresh cilantro
- 2 limes
- 5 stocks of green onion
- 2 garlic coves
- 1 cup shredded cabbage
- 2 vine ripened tomatoes
- 1 avocado
- 1/4 tsp chilli powder
- salt and pepper to taste

DIRECTIONS:

- Preheat oven to 425 Degrees C.
- In a baking dish, coat fish with oil of choice ( olive or coconut)1 whole fresh lime juice , 1/2 of the chopped cilantro, minced garlic cloves , and 1 TBS of the Chipolte sauce , chilli powder and salt & pepper .
- Cover the dish with tin foil and place in oven for aprox. 20 min or until fish is cooked to desired liking.
- While fish is cooking lightly steam cauliflower for 3 min. Add into food processor and pulse until it becomes rice like.
- Chop  up stalks of green onion, cabbage, tomatoes, and cilantro. Combine into cauliflower rice , squeezing in all the juice of the remainder lime. 
- Add a few dashes of chilli powder ( you can add some other hot sauce if you like it extra spicy!) then salt & pepper to taste.
- When fish is finished cooking, place over top of cauliflower rice, add some sliced avocado to the top and don't waste the sauce the fish cooked in! Drizzle that over top for some added kick to your meal ;)
