Hazelnut Coconut Coffee Pancakes

I saw this coffee pancake idea on Marks daily apple. I have been drinking Costa Rican coffee since the day I have gotten back, the coffee here just wont cut it any more haha. I though this recipe sounded so appealing I just had to try it! Make sure you brew your coffee really dark to enhance the flavour :)!




INGREDIENTS: ( serves 1)

- 1/4 cup Hazelnut flour
- 1/4 cup coconut flour
- 2 eggs
- 1/2 cup brewed dark coffee
- 1/2 TSP vanilla extract
- 1/4 TSP baking soda
- 1/4 TSP baking powder
- Pinch of salt

TOPPINGS:
- Butter
- Maple syrup
- Toasted almonds or hazelnuts

DIRECTIONS:

- in a large mixing bowl combine all dry ingredients.
- Add in eggs, vanilla and coffee mixing well until there is no clumps. Add coffee slowly until desired consistency is reached. ( You may have to add more then 1/2 cup depending on how much flour you used )
- Heat a frying pan on medium with a bit of butter, and pour a small amount of the mixture on pan.
- Cook approximately 3 minutes on the first side and 2 on the other.
- Once all pancakes are cooked serve with butter , maple syrup and any other toppings you like. Oh and don't forget to have a cup of coffee with them  ;)
