APPLE LEMON PULMP COOKIES WITH CRANBERRIES AND SPICES

More creations with juicer pulp :D! its fun to invent something with what would normally go in the garbage/compost, instead I'm using every bit to make healthy delicious snacks! These lil guys turned out awesome, its my Paleo version of an apple fritter, top this Tim Hortons :p


INGREDIENTS: (makes 1/2 dozen)

-1/2 cup of apple and lemon pulp from juicer (you can use chopped up apple bits and a TBS of lemon juice if you don't have a juicer)
- 1/2 cup almond flour
- 1/2 flax seed flour
- 2 TBS maple syrup
- 1 tsp vanilla extract
- 1 egg
- 1 TSP baking soda
- 1 TSP cinnamon
- 1 TSP cloves
- 1/2 TSP nutmeg
- 2 TBS melted coconut oil

DIRECTIONS:

- In a food processor add apple/lemon pulp (or apple cubes & lemon juice), almond flour , flax flour, baking soda and all spices, pulse until well combined
- Crack egg into mixture, a and add vanilla and maple syrup, and blend again.
- Melt coconut oil, and slowly add into food processor while pulsing
- Preheat oven to 325 Degrees F
- Line a baking sheet with parchment paper, and spoon out mixture into small balls on sheet ( makes about 6 - 8 depending on how big u make them)
- Bake in oven for 30 minutes
